
Hainanese Chicken Rice Recipe (Serves 2)

Ingredients:
For the chicken: 2 chicken thighs (or 1 chicken leg quarter), 3 slices ginger, 2 stalks spring onion, Salt to rub
For the rice: 1 cup jasmine rice (rinsed and drained), 1 tbsp chicken fat or vegetable oil, 2 garlic cloves, minced, 2 slices ginger, 1½ cups chicken broth (from poaching)
For the soup: Remaining poaching broth, Salt & pepper to taste, Optional: napa cabbage or tofu
Steps:
1. Poach the Chicken:
- Rub chicken with salt and rinse.
- In a pot, bring water to boil with ginger and spring onion.
- Add chicken and simmer gently for 20–25 mins.
- Turn off heat, cover, and let it sit for 5–10 mins.
- Transfer chicken to ice water for 5 mins (for tender skin).
2. Make Fragrant Rice:
- In a saucepan, sauté garlic and ginger in chicken fat or oil until fragrant.
- Add rinsed rice and stir to coat.
- Pour in 1½ cups of the poaching broth.
- Cook in rice cooker or on stove (low heat, covered, 15–20 mins).
3. Soup:
- Reheat remaining broth.
- Add salt, pepper, and optional greens or tofu.
4. Plate and Serve:
- Slice chicken, drizzle with sesame oil or soy sauce.
- Serve with fragrant rice, hot broth, and cucumber slices.
